Poches cracklings were not impressive at all when I tried them 7 years ago.

You must be a local with your knowledge of Early's, let the tourists stay at Billy's and Best Stop

I like a good, simple link of boudin most of the time. The balls and other stuff is only when I'm on the mood.

Early's
Never been. At first I thought this was a typo and you meant to say Earl's (Lafayette), which has been recommended to me as well.

Nope. Last time we were in Acadiana, I thought of stopping off at Billy's. Line was way too damn long, but I remembered someone else here mentioning Early's. Went there instead. Did not disappoint at all.

Best plate lunches for the $ too. I'm with the poster above, if I'm not eating a boudin ball I just go to Early's for boudin.

On St. Mary, about three blocks off the round a bout in Scott heading into town. It's a grocery store on the left hand side, you can't miss it.

I used to like Earl's more than Billy's. Also loved their pre-made burgers too for huge grill-outs.

But several years ago, after the old man sold the store to their nephew, seemed the stuff was off and not the same. I was later told that the nephew and his uncle (who still owned the crawfish/daiquiri place next door), got into a squabble. The result was that the nephew could no longer use the original recipie for boudin.

Don't know if that's true, but would explain why the boudin went downhill.

I do know he went back to Earl's old recipe for the pre-made burgers, money again.

See, I would like the rolls better if it was this "wrapper"..

.. instead of the one they currently use..

The one they use is the bumpy kind that Chinese places use, and they are always gooey on the inside. But the top one is always super crisp and wouldn't overpower the boudin like the current wrapper does.

Regardless, I love Billy's.
