I've managed two higher volume bars in two different cities and have friends who either own or manage as well. I can tell you its not that common. We might marry bottles(which is against the rules) but subbing is not kosher. You see this more when bars have shady employees and lack of oversight. The employees are just trying to cover up their misdeeds

Yep. In high school and college I was friends with several bartenders. We'd drink the good stuff for free all night and then at closing, they'd pour in the generic to account for the inbalance between money in the register and an entire bottle or two of Goose, Patron, Makers etc. disappearing. We're not talking high caliber bars though. Just your typical Uptown/Mid City/Lakeview places. As far as I know, no one ever noticed.

The Absolute was actually Taaka. The Kettle One was actually Absolute. No one ever said a word about those, whereas on very rare occasion, someone would complain about the Crown/Seagrams. Very few people are drinking straight Vodka. It almost always has something else in it.

Only if I'm shooting vodka straight up(the only way I shoot at a bar). I can definitely tell difference between Crown Rousse and Amsterdam.

You are right bout that.
The difference between wells and calls, is at least 2x or more, depending on the spirit, which means these places basically stole half of the tab from the patrons.

During my business travels I noted that in many states they are required to run a key or knife down the label on the bottle to tear it as soon as they empty the bottle at the bar. They do it right on top of the bar so everyone can see. I asked and they said it was a state law designed to stop them from refilling the bottle with cheap booze. They have to do it in plain sight as part of the law. Apparently the undercover alcohol enforcement guys would just come in and drink until a bottle ran dry to see if they destroyed the label correctly. I need that job. I thought they did this in TX but apparently not.

Unless you're uncorking the bottle, how are you sure you're not getting the shaft as well. Seems easier to substitute out wine than most liquors.
