We did Aruba for about $3500........all inclusive.

You could easily do NYC for 3k. I just went 4 days for $1500.

Do you enjoy the beach, or sightseeing/new places?

We went to an all-inclusive in the Dominican Republic for less than $3k for 6 days. Was great. Lots to drink and plenty of lounging on the beach.

Same as you, I recommend the all-inclusive because you tend to relax more and enjoy it when it's effectively pre-paid. Knowing I'm paying for each drink/meal makes me less likely to order what I want.

We are doing all inclusive at the Valentin Imperial Maya resort in Riviera Maya, Mexico for about $2500.

I would travel Europe in the winter. At the end of the day you will save about half on airfare for what you pay in Spring and Summer, my round trip with turkish airlines was only $700. Once you are there you can airBnb for pretty cheap or stay at 3star hotels for about the same price as an airbnb. I went to Eastern Europe in late Feb/early march for 18 days, traveled 5 countries by train and spent around $3500 total. I also splurged at expensive steakhouses a few nights.

Ideally, I could have cut the trip in half and done 2 countries for $1800 i figure.

We did Key West for about 2500.00 It was wonderful. But then it was March and we live in Illinois. We thought we died and went to heaven with 80 degree days. Seriously, it is a great time. Good luck!
