That's because they weren't using the original recipes. Not that the food was 5 star or anything, but they used inferior ingredients when they came back to New Orleans and Baton Rouge.
Also, Panchos was always cafeteria style service and you used the flag for refills. The new way was a buffet feed trough and it was disgusting watching Mana Cass roll up and sneeze on the enchiladas.
They got it wrong on both of these fronts and failed because of it. You could definitely taste the difference in several of the food items.

I ate at one in Tucson a long time ago and I distinctively remember the food sucking A LOT.

The was a downtown NOLA location in the mid-70s. (Maybe on Baronne?) It was decorated to look like a courtyard of a Mexican town with about three stories of free space above the dining area. It was very dark in there and the buffet was about $1.49 in 1975.
I went to eat there before going to this '75 Saints game:

Ironically, the Packers were up 16-0 in that one and lost it too.

I'm not sure if it's up to the individual franchisee or not in determining what recipes to use, but there was a huge Facebook pushback on the New Orleans and Baton Rouge locations. They tried to promote the return of the original recipes but that point, even the Panchos loyalists had disappeared. Plus, they were charging normal restaurant prices. People were used to cheap prices for mediocre food. The price point took away from the nostalgia as well.

There was a rule in BR growing up that you had to shite in the urinal at Ponchos. I went there twice, and both times it was so someone could do that.

My favorite Ponchos story involved a clown that trolled the Tom Fitzmorris food show to ask about Ponchos. Fitzmorris' reaction was priceless.

Exactly.
So many people claim Panchos gave them diarrhea, but no one went there to eat a typical 500-700 calorie meal.
You were doing well to not eat your daily calorie allotment in a single sitting. Of course you were going to get the shits afterwards.

In college, we'd fast for a day and then go to the one on Florida to load up.
The new one on Siegen was not the same setup. It was buffet style, and it sucked.....not that it was a culinary tour de force to begin with.

We would to use it as a clean out. Hit it on Saturday or Sunday morning after a heavy night of partying. Then head home to wait on the impending results.
