Marinate in mustard and hot sauce briefly. Bread with LA Fish Fry Seasoned (Blue Bag). Fry at 350 degrees until done.

Yellow mustard and hot sauce before putting the batter on. I usually coat them and let them sit while I work on prepping everything else.

season well, dredge through seasoned corn meal and then straight into 375 grease, pull out when they float

A different way:

Soak the fish in buttermilk for at least a few minutes. Dredge in seasoned corn meal, fry at 350 degrees until floating and golden. Drain on a wire wrack.

soak in hot sauce.. dredge in flour seasoned with tony's, slap ya mama or other seasoning of your choice, fry... enjoy

Two hrs before fry marinate in milk,mustard,worcheschire and a dab of crab boil. Dredge in Zats Crispy Southern, then go crazy at 365

Make up a few different drenches and split your catfish up, but use the same dredge for each. Each type of nugget will be a little different, and you'll get some variety. A friend of mine does this for the Superbowl(tm) each year and it's always a big hit.

Put your dry batter in the freezer overnight. If everything is cold the batter sticks better.
