People with a tiny bit of knowledge will rush to repeat to you that they learn from some Food Network authority that extra-virgin olive oil's character is diminished or destroyed when brought near its smoke point.
Italians, however, fry in EVOO all the time. Especially in southern Italy. Mario Batali fries excluively in EVOO and asserts that the difference is worth the expense.
