I made a crudo the other day with salt, pepper, lime juice, lime zest and EVOO. top with sliced jalapenos. This was the second batch I made so it wasn't as aesthetic as the first.



also did one with soy, lime, orange juice, red pepper flakes and EVOO. sprinkle salt on top after drizzling the sauce.

Would never marinate in citrus juices unless I am making ceviche.


Which is something to consider if it hasn't been recommended.


Still can't get over fresh blue fin.

Who did he fish with that snagged a bluefin? Figured that news would be pretty wide spread

ETA: nevermind, see your post now. Yeah, sear it or ceviche it. Do both and top one with the other.

get some blackening season, apply a small amount of olive oil to steaks then generously apply seasoning. Heat butter to medium to medium/high heat in black iron skillet. Blacken tuna for about 20 seconds each side or until it's cooked to your liking. Slice thin and dip in wasabi mustard.
That's my favorite way to prepare it.

That seems like a great way to cover the natural flavor of the fish.

If that's your goal, that would work.

I use blackening seasoning a lot of times. Fish has no problem competing with the seasoning.

Either raw or use McCormick Steak Seasoning and pan sear in some light olive oil. That's it.

McCormick is great on burgers and tuna, not so much on steaks. Haha.

For a sauce, combine about three tablespoons of Sriracha and three tablespoons of mayonnaise, add a couple drops of Soy and mix with a fork.
