Since the other two have commented I figure I will echo what they said. There is a ton of stuff coming up to get involved in. All 3 clubs have meetings in the next 2 weeks basically. I know that Brasseurs and Red Stick have Oktoberfest parties. Brasseurs' is on Sept 28th, unsure about RSB's. I would also assume that Bicycle has party as well. Then Brew at the Zoo happens on the second weekend in October and all 3 clubs should be participating in that.
On a solely Brasseurs/personal note, we have our "August" club brew on Monday at my house. Any and everyone is welcome to show up, trying to get started around 11.

Redsticks Oktoberfest is October 4th.

So here's my ingredients for my pumpkin saison I plan on making Monday. Got the idea from a Pumpkin Saison recipe posted in Zymurgy last year.
3 lbs. Canned Organic Pumpkin
1/2 lb. rice hulls
50% 6 row
4% Melanoiden
3.3% Crystal 60L
3.3% Victory Malt
1 lb Maple Syrup (6.6%) - at knockout
1 lb Wildflower Honey (6.6%) - at knockout
.7 oz Magnum 60 min. (28 IBU)
McCormick Pumpkin Spice (1 tsp) at knockout
Wyeast 3711 French Saison
Estimated OG - 1.073
Estimated FG - 1.006
ABV - roughly 9%
I want it ready by Thanksgiving. Thinking about adding some oak chips to this as well.
Your thoughts?

6-row, eh? Nothing wrong with that, but you don't see it used a lot. I'm not a fan of adding honey to the boil, but I guess it depends on if you just want the sugar or the sugar and the aroma.
I just ran by Brewstock and picked up some ingredients. Decided to try my hand at an IPA again. I took a grain bill from a HBT recipe and worked up some hops.

2 oz Centennial
2 oz El Dorado
Still working on the hop schedule. Going to go with some Heady yeast. Hopefully the weather holds this evening and I can get a weekday brew in.

When you say 50% 6-row are you factoring in the sugar and honey as part of your gravity?

6-row supposed to be better for high adjunct beers. And yes, the honey and syrup are more to get the gravity low.

Also, how do you culture yeast from a bottle? I have a buddy searching for a couple beers from Jester King while in houston this weekend, and i want to take the dregs and "save them" or culture them. I have a few clean empty white labs yeast vials to store them in, if need be.

Get a jug and throw some starter wort in there, then throw in the dregs. Feed it every few months with a little sugar.

These days the diastatic power of 2-row is more than adequate for high adjunct beers. I really dislike the grainy taste of 6-row (ymmv) and I see no use for it at all.

It's just that I'm so used to dealing with people that get into hobbies so hard and fast and then burn out so quick compared to the people that grow slowly as they get into the hobby organically. Hope you're really that into it and keep with it but Damn.

I hear ya. And believe me, I hope I stick with it too. I've had a few hobbies and I've wasted plenty of money slowly upgrading until I get to where I wish I was when I started so I figured I'd go aheaad and start off at least somewhat ahead of the curve. I really don't see me getting tired of brewing beer so I have no problem spending a few hundred bucks to get to where it's a more enjoyable hobby. Only time will tell, but I like drinking beer so I don't see this spark burning out :)

Has anyone tired anything like that? I have a basic saison hopped with Nelson Sauvin waiting for bottling that I might try this with.
