What's your current favorite vegetable?

I'm really enjoy asparagus right now. I've been mostly cooking them quickly in a cast iron skillet, or roasting them in the oven, but today I put them on the grill. So simple yet so good. Grill four minutes. A little olive oil. A little kosher salt. So good. It's really my favorite side right now. Paired them with some nice steak tonight.

Broccoli, baked at 425 for 8-10 with olive oil, salt and pepper, and then dusted with some parmesan.

Swap between asparagus and broccoli for our green vegetables.

Yellow squash peas and butter beans are all weekly dishes at my house.

Potatoes although Asparagus is always legit..... Just Potatoes are so versatile and can find a way to put them in almost any dish

I eat so many vegetables it's hard to pick a favorite.. Zucchini, squash, spaghetti squash, broccoli, spinach, and kale are what I use most often. If I had to pick a single favorite... broccoli

Try drizzling a little balsamic vinaigrette on them. I love asparagus. Been eating a lot of steamed broccoli too. put a little butter, salt n pepper on them after steaming.

Every since I switch to a mostly paleo diet, I've pretty much enjoyed any vegetable I've tried, except for egg plant. For some reason I hate the texture.

I love eggplant. Slice it thin, salt it and let it sit for 30 minutes, eggwash and coat in parmesan, bake it, then make layer it in lasagna like noodles
