So let's make a yeast starter.....yea, I know.....a starter needs a minimum of 12 hours before you can pitch it. I have a solution......
I'm using 2 liters of the wort we just created. Put it in an Erlenmeyer and boil it to sanitize it.
I put some Ferm-cap drops into the starter to prevent it from boiling over when I put it over the fire. I find these drops slow down the boil over enough to let me catch it in time but dont prevent it. And I put in way more drops than the recommended amount.
Fire it up. I ale=ways feel like a bad arse brewer when I bring out the lab equipment.
I'll let it boil for 10 minutes to thoroughly sterilize the wort.

So the starter has boiled for 10 minutes....gotta cool it down to under 80 degrees before I can pitch yaest into it. Too hot of a wort/ starter will kill the yeast. Its about 50 outside so the water outta the sink is pretty chilly. I'll let it run for a while...maybe put some ice in there.

Sink water wasn't cold enough so I transferred the starter to a bucket of ice......phone battery is low so no flashy.

Have my starter cooled down and time to pitch the yeast. Safeale-04 dry yeast in this case.
Then...into the fridge that has a temperature controller on it set to 65....I'm not boiling this beer tonight.....thats my solution. Ive been mashing one night and boiling the next day for at least a year. My starter is on a stir plate (magnet is in the flask and the black block thing is an electric field that spins the magnet and aerates the starter.
I'll pick this thread up manana when I Boil.

Obviously I could go to a home brew store but I was curious to get yalls thoughts.

No. Ended up being a different farmhouse. The brett didn't end up meshing well with the recipe from that thread, at least not in time for Zapps. Hopefully it matures better. It's not bad. Just not what I was going for. Kind of a meh beer.

that beer still hasn't carbonated. Pity, because it tastes really good.
I am planning to box it up and let it sit until I get a keg system, then dump it all into a keg and carbonate it that way

Update on the.starter.....about 8 hours later and we have a krausen......the foamy head you see at the top. This is indicative of the yeast working away eating sugar and pooping out alcohol. As the yeast work, they multiply into more yeasts. This is the purpose of the starter, to create more yeast cells for when you pitch them on the full 6 gallons we are brewing.

We were thinking about brewing last night but it didn't work out. I might brew tonight or wait until tomorrow when it's nice outside. what's your volume going into the fermenter? 12lbs with 1.049 pre boil seems low. Or seems like about what I end up getting and I feel like it's low.
