Peel and cut in chunks. Boil in lighty salted water until very tender.
Mash with fork. Mix in a little melted butter, an egg, some Panko bread crumbs, a little yellow mustard and a touch of garlic.
Spoon fry.
Taste a lot like fried oysters.

Slice them up, maarinate in balsamic vinegar and grill them with a little cavender's seasoning.

Peel, cut into thin slices, lightly fry, stuff with a blend of herbs and goat cheese rolled up, return to the pan, serve on top of marinara sauce.

Peel, cut and boil in crab boil till mush. Transfer mush to cast iron or magnelite, Mix seasoning salt to taste, cruched garlic bread crums, shrimp and lump crab. Stir all together. Once stirred, add a nice even topping of crushed bread crumbs to top, put in 400 degree oven on bake, top off, for 30 minutes or until bread crumbs on top are golden brown. Eat the shite like theres no tomorrow!

shrimp and eggplant casserole

Moussaka is my favorite way to cook eggplant.
But.. if you want to grill the eggplant, I slice them in half and sprinkle some kosher salt over the white part and let the salt sit there for 15 minutes, and then wipe the water off (this removes the bitterness from the eggplant).
Put the eggplant on the grill (low flame) skin side down for about twenty minutes, then flip over and let the white side get browned. The eggplant will get tender.. take off the grill and drizzle olive oil and salt and pepper.. Grilled eggplant is really good along side of chicken.

Peel, cut into small chunks and cook, throw in a food processor or blender with some tahini, EVOO, plenty of garlic, and lemon. Presto, lower calorie hummus...also known as baba ghanoush. Damn tasty too.
