Someone told me to coat it in Tony's, add mayo and shredded cheese and bake it.
Any better ideas?

I'd stop talking to this person.

that sounds absolutely horrible
I usually bake mine with just salt, pepper, and some fresh herbs over the top. Sometimes I'll rub it with a olive oil and dijon mustard mixture, then sprinkle some panko or bread crumbs over for a crust
I've tried grilling on a cedar plank, but all I did was set the plank on fire

I'm a big fan of grilling salmon on a cedar plank
skin on filet, soak cedar plank in water
lay the filet on the plank skin side down, season meaty side with seafood seasoning of choice, grill until desired doneness achieved

it'll probably take a little longer as it's partially blocked from the heat thanks to the damp wood.. but yeah, it doesn't take too long.

Soak your plank in water prior to cooking.

I think the rule is when you can easily flake off a piece with a fork it is done.
I do mine on the stove with just butter, seasonings of choice and lemon. Salmon has good natural flavor to me that doesnt need much help
ETA: Be careful not to overcook as with any fish. Can go from just right to dry pretty quickly

the corners usually do char or ignite... but if the whole thing goes up... well, I hope you liked it extra crispy

Salt and pepper, olive oil. meat side down in a cast iron until it releases, flip and cook skin side (leave skin on) until done.

Somtime when you're not intent on grilling, try baking it on a cedar plank or even just a baking sheet in a slow oven about 275. Takes a little longer depending on the size of the salmon, but the result will be the most moist salmon you've ever had. I season with a little lemon juice, salt and pepper.
Top it with the sauce below or a roasted red bell pepper sauce.

Here's an article and recipe about slow baking it. You won't regret trying this method.

Do this and you will never ever look back.
Put salmon flets in ziplock bag with 1 ounce each of 100% pure maple syrup, soy sauce and whiskey. Allow to sit for a few hours. While it is sitting in the fridge soak cedar planks, completely submerged.
When ready to cook place cedar planks on grill for 30 seconds to a minute (long enough to allow it to slightly burn and burn off the outer layer of water) then flip them over and immediatey place filets on the planks. (Make sure you throw a little chef paul's seafood seasoning on it, comes in a peach/pink jar)
Cover grill and don't touch until they are cooked to your liking. Allow the smoke to wrap around the filets and just keep a close eye on them so the planks don't catch on fire.
Best salmon I ever had.

wtf?
I have one that combines spreading a light amount of butter across the salmon, then mixing up oregano, lemon pepper, dill, paprika, kosher salt, garlic powder, and onion powder. I think 1/2 tsp of all of those. Then spreading that on top of the fish and baking it for like 10-15 mins on 425 i think.
Tony's and cheese

Little bit of sweet chili sauce, a dash of lime and sprinkle with some hot sauce.
or try a teriyaki glaze
or some soy sauce.
