Deer processing, opinions needed

A buddy of mine dropped off 3 deer 1 week ago & he got the call today that it was ready to be picked up. The deer had been gutted, skinned, shoulders & hams removed, etc. So there were 3 bodies, 6 front shoulders & 6 hind quarters.

We told them that we wanted the backstraps cut into 1 1/2" steaks & butterflied, tenderloins cut out & packaged, 30 pounds of pan sausage (60 pork/40 deer) & the rest smoked link sausage (60 pork/40 deer).

The total is $428 for all that. What does the OD board think about that? Did we get a decent deal or was it a waste of money?

FWIW, I could have done the backstraps & tenderloins myself. I also wanted to debone all the meat but I had to come offshore so my buddy just brought it to them like it was.

We had the deer on ice in 2 coolers for 7 days.

I'm just wondering if $428 is a decent price considering the amount of meat we brought them.

Well I just brought 2 front shoulder and 2 hind quarters to a place (not deboned and never used this place before) and it was 138to get all linked sausage.

Sounds like you got a fricking sweet deal to me. Considering they did everything.

Well it comes out to $142.66 per deer & all I had to do was remove the skin & guts, detach the front shoulders & hind quarters (to fit it all in the coolers), cut the heads off & put them on ice.

The $428 also includes vacuum sealing every bit of the meat.

We brought 3 deer to the same place last year but we had deboned all the meat ourselves. All we got last year was smoked sausage & it cost us right at $2/lb. but we had it mixed 50/50 last year.

My buddy is gonna give them a call tomorrow and find out exactly how many pounds of smoked sausage we ended up with. They charge $18 / deer to cut them up for you (debone them). I know that we could have saved that $54 but I had to go offshore & he didn't feel like messing with it.

I don't know if you got fricked or not but this makes me really glad my dad processes my deer for me. I may go out and buy him a new gun after reading this post.

Opening weekend a buddy and I dropped off 3 WHOLE deer. All we did was gut them. And our total bill was $270. We got 80 lbs smoked sausage, 40 lbs breakfast sausage, backstraps cut into steaks and butterflied, tenderloins, and the rest in hamburger. Everything was vacuum packed and labeled. I thought it was very reasonable.


The processor said for an extra $10 per deer, they would gut them too.

428 sounds like a lot. I usually just make roasts with everything, not back straps, so im not sure of the price but that sounds way too high.

Not a terrible price IMO. Cost me $200 to process two deer myself. Plus it took half a day by the time I set up, de-boned, weighed, ground, mixed, cleaned and stuffed sausage casings, vacuum packed and cleaned up the work space. Made the sausage with 50/50 pork/deer using boston butts.

Idk if that was a deal or not, but DAMN I'm glad I do everything myself. I didn't realize that shite costs that much. I might start processing deer for people. It's a hobby that goes very well with cold beers

Ok I got the #'s today. We came out with:

30 lbs of pan sausage (60 pork/40 deer)
61 lbs of mild smoked sausage (60 pork/40 deer)
91 lbs of spicy smoked sausage (60 pork/40 deer)
tenderloins packaged together
backstraps cut into 1.5" steaks & butterflied

That comes out to about 100 pounds of pork, plus the labor, seasonings, smoking and vaccum sealing, i think you did alright

I also forgot to mention that they have 2 smokers. 1 commercial unit inside & 1 old school smoke house outside. We asked for heavy smoke so they did it outside. This may have also added to the cost.
