Open Fire Cooking

I'm going camping this weekend and plan on cooking over an open fire. I need some good recipes or ideas.

Take a grill grate and steaks...simple and good. Wrap potatoes in foil and roast 'em off the fire.

Ground beef
potatoes
carrots
onions
celery
Form hamburger steak with ground meat
place in double layered foil
add veggies
season however you want to
make foil pack, seal well.
make good fire, bury in coals.
remove after 30 minutes
eat

I have only done pastalaya and camp potatoes (salt, pepper, garlic, onions and butter) over an open fire. I bought a tripod and a 12" dutch oven so that I can get into open fire cooking. Just be sure you bring an arse load of wood.

If you bring a dutch oven, this weather would probably be great for chili.No beans if you're sleeping in close proximity to others.
The foil pack on the coals is great if you use a leg quarter instead of ground meat. Great either way, tho.

If he has a dutch oven he can make dinner in the foil pack and make dessert in the oven.
Great simple dessert that is easy, feeds several people:
3 14.5 oz cans of pears (put this in first)
half cup of brown sugar (on top of pears)
quarter cup of cinnamon (on top of pears)
1 box of white cake mix sprinkled over the top of the pears and press down into the juice and sprinkle some cinnamon on top. Cook for 30 min

It takes some effort, but the best steak I ever cooked was done straight on the coals, no grate.

i always take my dutch oven and do a golosh
hamburger meat tators and what not...
then eggs and bacon (and coffee) in the morning

Use the dutch oven to cook bisquits and you'll build a fire in your front yard and do them like this before work each morning. Really good.

A good pot of red beans does well or any kind of beans for that matter.
