Probably the most potential, Schwartzman seems to have a solid ear for catchy pop. And I liked the one Phantom Planet album he was in on.

I've yet to listen to the entire She & Him album, but I agree with all your other points.
I've been pretty impressed with Dead Man's Bones though, was not expecting that from Ryan Gosling.

Steve Martin won a Grammy last year for Best Bluegrass Album. None of the others have won anything so I guess that make him the best "celebrity" musician.
