honestly, it could vary wildy depending on amount of roux, amount and kind of sausage,etc.
It also would depend on if people skim the rendered fat off the top as it cooks like i do, or just leave it in like lots of people do.

Then there is the rice. If carbs are a concern, I guess you could try it over brown rice.

You *can* make roux without oil. It just takes some patience and practice. (my uncle does it, but I haven't gotten the hang of it yet) The flour is what flavors and thickens the dish, the oil is just a way to transfer the heat to the flour and brown it.

Gumbo is very healthy. The world would be a far better place with gumbo everywhere. All would hold hands and dance in a circle, with neither time nor inclination to make war upon his neighbor.

If not using oil to start the roux....you better be patient and diligent. You have to stir, stir, then stir some more. Once that flour gets to the color of caramel, you better have your liquid ready to go. It will burn quick.

Seafood gumbo is much healthier....and the only gumbo I eat.....only 9 grams of fat per 1 cup serving.
