I almost always just use Benoits smoked venison sausage I have made, so I can't help much, although Best Stop or Don's smoked chicken sausage is a great addition whenever I am over that way to grab some.

Tip:add kevlar to your attire...I've had to use it, but that stuff just ain't good. If you have to go vanilla commercial, and up here we often do, I use Down Home brand or Richard's.

When I come home, my buddies always haul me to a little store in Pine Prarie to load up my cooler. Can't remember the name...never had anything bad from their counter, though.

I use the smoked pork sausage for pigs raised here at my house. I take the pigs to Bellvue (north of Haughton) for processing and he does an outstanding job.

My Dad makes and smokes his own pork sausage and that's what I use. It's good and the price is right.

this use to be my answer. dad and i built a smoke house on the back of his property years ago. he produced some dang good sausage (usually pork/beef mix). Katrina destroyed the smoke house and he doesn't get around well enough anymore to rebuild the smoke house or make his own sausage...

these days, i buy whatever i can get at these south plains grocery stores....which, quite frankly, isn't that impressive.

u ever tried mac's? not too bad, better than manda.. My gumbos are usually pretty at the moment decisions. I look in the freezer and see a build up of oyster juice bags and chicken stock bags and then look to see if I have any sausage and chicken.. I need to start planning..
