I'm gonna try this over the weekend.
VEAL SPEDINI
1 lb. veal scalopini, cut very thin sm. slices
Italian bread crumbs
Grated Parmesan cheese
Fresh parsley, chopped (Italian)
Fresh garlic
Shredded Mozzarella cheese
3 or 4 skewers
Vegetable or olive oil
Ground pepper
In one dish prepare bread crumbs and add grated cheese, chopped garlic, parsley, ground pepper. Mix dry ingredients. In one dish put oil. Dip small pieces of veal into one side of veal put a little bread crumbs and shredded Mozzarella cheese then roll very small and put on skewers. Repeat (6 should fit on one skewer). One pound should make about 3 or 4 skewers.
When finished, dip each skewer with meat in the oil then in the bread crumbs on both sides. Place on the bbq grill for 4-6 mins each side.
Or you can put on flat roasting pan in oven or broil about 7 to 8 minutes on each side until brown.
Serve with salad vegetable (asparagus) or potato lianse. Makes 3 or 4 servings.
* Grilled eggplant and angel hair pesto pasta also goes great with spedini..

"famous butter chicken" not sure where recipe was found... somewhere online. involves breading the chicken with crushed up ritz crackers then topping them bastards with butter before baking. yummy stuff.
although seasoned/baked chicken with broccoli does the body good.

Tonight I'm trying something new. Bought 2 pounds of skrimps. Will peel them and then boil peels for stock later.
I'll heat the wok and pour in some olive oil. Then sautee the skrimps for half a minute while adding a touch of salt and red pepper.
Then I'll squeeze in some lemon juice and lime juice along with some melted butter. Stir. Reduce heat to simmer...cover for 3 minutes.
Then serve over rice. Steamed broccoli will the be the side dish.
