Creative breakfast ideas

We’re doing a little competitive breakfast potluck at church in a couple of weeks. I’m sure there will be plenty of breakfast casseroles. I’m trying to think of something hors d’oeuvre style. And something that will travel well and be ok sitting on a buffet line

The bacon egg and cheese bites in rice paper. Instead of the original viral recipe where you use three sheets of paper to make a large bagel size, you use one sheet and make the spiral shape after rolling them.

Air fry them and I think they’d stay crispy.

How about breakfast sliders? Hawaiian rolls, breakfast sausage, egg, cheese.

Or breakfast burritos?

Enchiladas? Bulk Chorizo cooked and wrapped in a tortilla. Lay the enchiladas in a casserole dish. Top with a canned green chili sauce (or make some type of cream sauce yourself). Add cheese and bake.

Was going to say the same thing. Could even use biscuits and call them biscuit sliders.

Another thought - have y'all seen these videos where you smash ground meat on one side of a tortilla? They've gone viral in my feeds the last couple of months.

Spread the meat thin, sear the meat side first and then flip to crisp the tortilla. Only takes a few minutes. It's actually one of the best quick weeknight meals we've added to our rotation lately.

Usually it goes in a burger direction but you could use breakfast sausage and when you fold add some soft cooked scrambled eggs with peppers etc to make it lean towards Mexican flavors.

For sausage, I would spread thinner than what you see on these burger variations. I've made a sausage and egg version and it was delicious. Might need to wipe the pan out before you flip to tortilla side if it has too much rendered fat in it.

You could easily cut them in half or even quartered. I think they would hold up pretty well even if they cool down some since the tortilla turns out pretty crispy.

Even better if you have a steam chafing setup on site for a hotel pan.

Funeral sandwiches is the answer to this always. They are great hot or cold and people demolish them. I have never seen any leftover.

Make a salsa verde and a salsa roja. ArnieTex on youtube for recipes.
Make tacos: (1) bean and cheese; and (2) potato and egg.
Griddle them off
Wrap in foil.
Watch the other church member weep in defeat.

Bite size dutch babies with different fillings. Can do fruit in some, chocolate / nutella in some, and bacon / hearty stuff in some.

Ground & brown some breakfast sausage.
Once browned, mix with cream chease and cheddar cheese.
Get a pyrex, roll out one can of crescent rolls.
Spread out your sausage mix.
Roll out a 2nd can of cresent rolls and lay on top.
Put it in the oven.

You can get creative and add whatever in the middle mix, but this is
Guaranteed to get demolished.

This thread reminds me of the time I made hash brown casserole balls. We had a leftover HBC and used a portion scoop to make balls, breaded them with panko, and deep fried until golden brown. Served them with a spicy version of comeback sauce.

It's a permanent fixture on our breakfast buffet now.
