Saw this posted on Instagram and knew I had to try it.

I forgot to say, I used the Red Lobster cheddar bay biscuit mix and fire roasted Rotel

You think this would still turn out sturdy/solid if I doubled the cheddar?
I use 1lb of cheddar in my traditional recipe, but I don't use cream cheese, so I'm worried 1lb of cheddar AND a block of cream cheese AND Rotel would make them not "biscuit". Although I guess if I opt to put a block in the middle, I don't need a pound of cheddar.
And I guess same question if I was using Red Lobster mix instead. I suppose I need to just experiment and see.

This is our favorite using jalapeño pimento cheese.
I'm sure it could be even better if you subbed the Red Lobster biscuit mix.
