My work is sending me to Dubai for a week next month. Any recommendations of what to see or where to avoid? I know I’ll stand out like a sore thumb as a blonde hair white American

yes, you will stand out amongst the millions of expats from all over including the UK, Australia and the US.

What kind of stuff are you into, and how much leisure time are you going to get?
There is almost nowhere that is unsafe in the UAE, although I spent the majority of my time in Abu Dhabi. The heat wasn't bad, coming from Houston, but be prepared for it to get chillier than you would expect at night.

Went earlier this year as part of our honeymoon, stayed at St. Regis the Palm. We did Dubai Mall, Burj Khalifa, Burj Khalifa light show (Fountains were being updated so no fountain show but I think they go together now). We also did a day in Abu Dhabi and went to the Grand Mosque.
We enjoyed it all, only thing we didn't really like was Museum of The Future, it was boring and more geared to kids I think.

I agree, the douche factor was much lower in Abu Dhabi.

Dune Bashing and desert BBQ.
Fishing charter.
Drive the Aston Martin GT4 race cars at Abu Dhabi F1 track -- only about $500 for about 20 minutes of racing. Worth every penny.

It's a been LONG time since I was there, but the beaches and looking up at the stars at night while on said beaches is what I remember, but I enjoy the simple things. If things haven't changed you can get a knock off of almost anything.
But really the beaches and the stars, looking up with few city lights in the Persian Gulf will amaze you.

If you go the courtyard in Abu Dhabi, every plane flying ín turns final over you in the rooftop.

Dubai is basically Vegas without the booze.
And hotter.
