Snapper Throats

Caught some really nice snapper last week and have a gallon back of throats the deck hand cut out for me.
I've never cooked them before. Any tips? Was planning to clean them up and grill them but open to better ideas.

Hamachi Kama is yellowtail throats, but any of the recipes you find for that should work for your snapper…it’s a popular dish so there should be many examples.

Personally, I'd grill some and use some to make a pot of fish soup. Wrap the throats in cheese cloth so the bones will not get all up in the broth and make it no fun to eat.
Too bad you didn't get some of the backbones to use to start off with a good fish stock.

I had them fried in Fairhope one time. They were delicious.

Southerleigh is San Antonio serves them fried and they are delicious. The fins come out like crispy potato chips. Great with a cold beer.
Grilling is another great option as mentioned. could also do fish stew similar to bouillabaisse or courtbouillon.

Salt, pepper, minced garlic, butter. Score them and rub that all in. Broil in oven. Incredible.

Snapper throats are delicious and simple.
Season generously.
Place on grill
Baste with seasoned lemon butter sauce as they cook.

Here's one I cooked on the grill a few months ago. Homemade mojo marinade/topping. Turned out really good.
They are a good piece of fish to grill over charcoal or wood, but you can also deep fry them. I remove the membrane on the skin for both
The corn ribs went great with the throats
