Nola Chefs Compete on Beat Bobby Flay

Was watching Beat Bobby Flay on the Food Network and the owner and head chef of Gris Gris faced off against the executive chef of Ralph’s On the Park for the chance to cook against Bobby Flay. I thought it was pretty cool seeing the head chefs of two local restaurants compete against each other. Gris Gris won the first round but lost to Bobby Flay cooking crawfish etoufee. Bobby’s crawfish etoufee didn’t even look like etoufee. Still great publicity for local chefs.

I’ve always felt these competitions were rigged to Flay’s favor. Those judges know which is his, and they need to make sure he continues to look like the most darlingest of all chefs. I can’t watch that show

Honestly it looked extremely dry. It was just seasoned crawfish on top of rice. The chef from Gris Gris made authentic etoufee that looked much better. I wouldn’t be surprised if it was rigged.

One of them appeared to be from New Orleans or had a connection to the city. I doubt the others knew what it should taste like.

He definitely did not make a traditional dish. It did have different flavors. He had a green onion sauce on one side of the dish that was strange, but was probably tasty. The etouffee didn't have much sauce, but had a lot of crawfish. He made some garlic bread and mixed pureed crawfish into the butter mixture which was likely quite good. His dish had more eye appeal.
Eric's was more traditional, but when he was spooning the etouffee into the bowls, it was obvious that there weren't many crawfish in the sauce. It looked more like soup with not much crawfish. There were comments about the lack of crawfish and more of a one dimensional dish. Well, etouffee is sort of one dimensional. Eric topped the rice with some seared tasso for texture. It was not a very attractive bowl. He should have at least added some chopped green onion and maybe some fresh parsley not that I think it would have put him over the edge. It would have made for a better looking bowl, though, and I like the flavor of fresh green onion and parsley in etouffee.

Thanks for sharing that episode. It was interesting. Honeydew melon as Bobby's ingredient for the 2 Louisiana chefs was challenging.
Kardea Brown said she was a Southern girl and potato salad and hard boiled eggs don't belong in gumbo. She's obviously not from far enough South.
I suspect she was the lone vote for Bobby in spite of his crunchy dirty rice.
