Seriously what kind of meat is this made of? I have never seen so much grease and it just falls apart as you sauté it. I grew up on basic Manda, which I love, but bought this because Rouse’s was out of large packs the last time I came into town.
This shite is gross.

Manda's, Savoie's and Richard's are all pretty crappy. But, sometimes you're in a spot.

Manda Sausage Dog at Tiger Stadium might be the greatest event food I’ve ever had.
I can stand tall saying that.

Richard’s is better than Savoie’s. I was told they use better ingredients. I tried Manda once and it was the worst sausage I’ve ever had

These are literally the only three brands I have seen in grocery stores in the Southeast. Can you recommend another that is available outside of Louisiana in stores?

That's the problem and why I said if you're in a spot. Over time I've used all three but would choose Savoie's over the others for tasso at least. I don't know what's available for you.

Thanks.

All I ever see are boudin and andouille in stores.

It’s got to be a different recipe. I get one regularly t the baseball games and they are freaking good.

Their stuff you can buy at the grocery store hasn’t been good for years.

Where do you live … what city ? I’ll research Louisiana specialty meats and provide some recommendations

I live in the sticks, but Birmingham is the closest metro area. There’s a couple of Cajun restaurants that have markets, but I can’t seem to ever get over there when they are open.

I think the sausage is what sets a lot of Louisiana cuisine apart. Can get most of the other ingredients fairly easily.

Agree. My regular grocery stores in GA sometimes have Savois and sometimes Richards but not consistently. They usually have a brand called Ragin' Cajun and one called Roger Wood's (made in GA I think) but they are disappointing to me.

I've found this Aidell's brand to be the best option I have for flavoring a dish like gumbo or beans. It's called an andouille but I find it just to be a decent general sausage alternative. Good spice flavor and quality meat if you are in a pinch.

My counsel:
- As an LA expat living in TX, we've learned to take a cooler along when traversing I-10 through LA. Our regular stops are Kartchner's in Scott for smoked boudin and Rabideaux's in Iowa, LA for smoked sausage, andouille, and tasso. Realize this probably aren't options for you but there are Rouses scattered along the Gulf Coast that would typically have some offerings. If you happen to be by one, perhaps you could stock up there.

- Chisesi Bros out of NOLA makes a "New Orleans Smoked Sausage" and a "Tony Chachere’s" sausage that are about as good as you can get outside of a specialty meat store. I have no experience with their other products. Check with your grocer and see if they can begin carrying these. Our HEB's in TX can be responsive to new product suggestions by customers.

- I have less issues with Manda than most on the FBD and if it and Savoies were the only two available, would select it - just my preference.

The 1lb Manda sausage packs are a lesser quality sausage than the Manda 2lb or larger packages. It must be all in the way it is produced and packaged. The 1 lb packages are a smaller diameter sausage than 2 lb or larger packages. In my opinion, the 1 lb packages look like Smokey hollow or something like that.

I prefer savoies to mandas or Richards. The last time I bought Richards it did seem to fall apart when it cooked.
