Grilled some boneless, skinless chicken thighs. Made a sandwich. Had slaw and chips to go with it. :)

Boneless, skinless chicken thighs have been and continue to be the best thing going when it comes to chicken, especially if you catch them on sale. Plenty of options when it comes to cooking them and pretty hard to mess up.

I did a welfare check on her a while back. She was ok but just not posting. I miss her posts as well.

I hardly ever find boneless skinless thighs on sale, but I often find bone in thighs on sale.

Only takes a few minutes to debone a pack of thighs.

I remember her saying she is now watching one of her grandchildren. I liked her posts. Always interesting meals for the challenges.
