Beef cheeks

Few years ago my wife and I were down in New Zealand and had beef cheeks-had never heard of them. They were wonderful. Tried to find them when we got back but either no one carried them or hadn't heard of them, either. Today in Sam's Club found several packages in the case. Anyone have any experience with them or how to cook them? Thanks.

Never cooked them, but from what I've read - braise, low & slow like beef short ribs.

They're cheap as shite but a pain in the arse to trim and prep for smoking. Also in the prepping process, you scrap alot of unusable meat and connective tissue. You lose about half the volume.

Now once trimmed and smoked, they're really, really good. Very rich and fatty. You would like them but I don't think the juice is worth the squeeze.

Trim them heavily then cover heavily in salt and pepper. Smoke at 250 until they have a good bark. Place them in beef fat and confit them until 195-200 or so

I smoke them for a few hours then wrap in foil with butter or beef tallow until they're falling apart. Makes awesome tacos

Sam’s and Walmart has been carrying them.

Very easy and forgiving to cook. Put them on the smoker, smoke them till you have a good bark and then cover and braise.

There are a lot of good how-to videos for them on YouTube.

Braised. Had them at Acre the one time I went. Very good.

Pretty common in northern Mexico, barbacoa tacos are underrated.

I order them off the interwebs Porter road butcher. Also one time I smoked than braised for tacos.

Moral of the story you want to braise them

As mentioned above, they're an absolute pain in the arse to trim. I remember watching that Killer Hogs dude make smoked beef cheeks and I was convinced I had to try them...he made them look easy. I got a pack at Sam's, spent 30 minutes trying to trim them, and ended up with several small pieces of trimmed meat in differing sizes which, of course, didn't cook evenly.


If someone else is cooking them, I'd love to try them. I'll never try it again.
