Sous vide for 72 hours and then sear in rolling crab boil.

Make sure to purge it with salt first, I’m sure that’s the secret.

Never a butt. Done quite a few loins, chickens, even turkeys like this.
I'd cube it or use a thermal probe to pull at 196.

I've thrown in some alligator steaks before and they were tasty, just eat them quick before they get tough.

you are overthinking this, if you want the crawfish boil flavor then marinate the butt in a bag with the boil seasoning you like, then bake it as normal.
trying to boil it is gonna make the meat tough

and you cant do the butt first because all that grease will mess with the crawfish flavor, so it has to be done separately with new water

No, but I just boil my crawfish with my Boston butt, just throw the crawfish in the pot and smother it down. Can do it in the oven or on the stovetop. Black pot works the best.
