And personally I would stay in an antebellum home like Anchuca, Duff Green, Cedar Grove, etc... if it's just you and your wife vs a hotel like the Hampton Inn or similar. That's part of the experience of a town like Vicksburg or Natchez in my opinion. This vrbo has always interested me too.

Rusty’s serves a nice dinner. 10 South for an afternoon cocktail and a great view. The National Park is fantastic. Lunch at Walnut Hills (get the fried chicken) is memorable,

Found ourselves there a few weeks back on a long drive on I-20 around dinner time. Stopped at Beechwood. Great place. I had the fried shrimp and oysters and they were fantastic. Steaks looked really good. It’s an old school place. I bet the haven’t changed the carpet since it opened years ago.

You can go visit Grey Oaks Plantation It is full an antiques and looks really nice now... some gay guy owns it now as a wedding/event/B&B spot.
Fun fact: It is where my mother lived during middle school, high school. My grandfather bought it on the cheap and spent 10 years fixing it up.

One thing I would add is you can call the park ahead of time and hire a certified guide that will ride with you. They are very knowledgeable and I think the cost is around $60.

The wife and I enjoyed the Ameristar Casino for a few hours and found the meal at one of the dining areas to be satisfactory.

Key city brewing and the roof at 1311 are great spots to hang out

Wife and stayed at Anchuca last year. Very nice with a good restaurant.
Touring the restored civil war gun boat is a must.

Civil war battlefield and see the iron clad war ship. We drove to poverty point for a tour of the largest known hunter gatherer civilization in North America (about an hour)

Absolutely a must. Amazing they were able to reclaim that from the river and restore it.
Also, if you are into such, there is an old Catholic church in town that is absolutely beautiful inside.
