Cousins Creole Tomato Dressing

I use this for dipping shrimp boiled and pizza in. Looking for what else I can use this for besides salad. I'm sure anything but just looking for something different.

You can use it in place of mayo and ketchup as a tangy spread on some sandwiches, especially if they have lettuce.

We use it as a dip for crab cakes. I have a friend who puts it in her crab cake mixture rather than using mayo. I haven't tried that yet.
We put it out with beef tenderloin when we served it sliced for cocktail parties.
Fried green tomatoes.
Fried fish-any fried seafood.
BLTs.
It's very versatile. I've seen folks dip their fried chicken in it as well.

Someone posted a recipe to make this dressing at home and I wrote it down and use it from time to time when I feel like making it.
Sure beats the hell out of paying what they want for a pint jar of it at the market.
You may want to play with the ingredient amounts to suit your taste or volume.
4 cups mayo
14 oz. can of diced tomatoes
1/2 cup minced garlic------I found this to be a bit much and cut back
1 tbsp. black pepper
Put all this in a blender and puree and pour in a mason jar and refrigerate.
Sure beats the hell out of paying what they want for a pint jar of it at the market.
You may want to play with the ingredient amounts to suit your taste or volume.

I know you said besides salad, but this dressing is a huge hit when I do wedge salads for parties.
Cut an iceberg wedge in 4ths, plate individually. Cousins Creole Tomato spooned on top of each wedge. Bacon lardons. Sliced grape tomatoes. Blue cheese crumbles. Everything But the Bagel seasoning. Balsamic glaze.
So, so good. Especially since blue cheese dressing traditionally served on a wedge can be polarizing.

the garlic was potent, but mellowed some with age. I used elephant garlic the next time and it was milder

Does sound like a lot. The other recipe calls for 1/2 cup of cloves which would be a lot less I would think.
Going to try this soon. I've been on a Thousand Islands kick lately and this is pretty similar.

Cousin's Creole Tomato, Oka's Miso, Trader Joe Fig Balsamic, Serop's House Dressing, are my four summertime cooldown salad dressings.

It would go well with that salad.
One of my favorite ways of eating cucumbers and tomato salad is to finely mince garlic and add it to vinegar and olive oil in a bowl, add some salt and black pepper and whisk it well to combine and pour it over the salad.
The only caveat is, it's pretty strong tasting with the garlic and not for everyone.
If any salad is left over, refrigerate it and eat later. It will be a bit wilted but packed with flavor.
