I already have Pinkertons, burnt bean, 2M, Eaker, Hays co, and Reese Bros on the list.
Any others that I need to add?

2 Bros
Rudy's?...hoping that's a joke. I don't even get gas at Rudy's (gasoline)

Maybe City Market in Luling.

My favorite BBQ in the world. The ‘hots’ (sausage) is a gift from God.
There is “Luling BBQ” across the street. Don’t drive all the way there and mistake it for City Market.

Can someone tell me why Bill Miller is so popular there? Might be the worst bbq I’ve ever had

It's not really BBQ.
Their breakfast is decent, though.
And it's cheap.

Bill Miller is the Dickeys of San Antonio. Fast food BBQ.

Burnt bean is really good, but it’s only open like Wed-sat and sells out fast. Plan accordingly. I would say Pinkertons as second choice based on your list.

The fried chicken is a flavorless sin. Couldn't be more disappointing.
Breakfast tacos are sufficient but the salsa is as mid as it gets. Never had the BBQ there.
I am pretty sure the onion rings at Laguna Madre (Bill Miller's Long John Silver chain) is the 1990s Popeye's recipe, which brought a tear to my eye.

2M has been great the three times I have been. Right up there with Smitty's in Lockhart (which for me, ranks as the best brisket I've had), Pecan Lodge (Dallas), and Hutchins (Frisco).
2M serves a great beef rib.

Rudy's is good for what it is, but it is nowhere near the best in San Antonio. That said, I do enjoy it.
Put Rudy's in Baton Rouge, and it would be the top BBQ restaurant in the city.

This. I travel to SWRI a lot for work. The original is near it and sometimes my only option to squeeze in BBQ on a trip. Better than most any brisket I can get in Alabama.
