I've never eaten goose and after reading this thread, I never will. Every single recipe posted sounds fricking foul.
Specks are good but it's still a goose. Don't bother with snows and blues. I only eat 3 ducks, teal, wood duck, and muscovy. They can keep those big ducks.

Specks are just as good as wood ducks IMO, although I’ve never done a side by side comparison.
I’ve eaten a snow as well, but it’s just like certain ducks, you’ll want to prepare and cook it differently. Some people are picky eaters though. If you’ve got something with a strong taste, marinate in game tame. Eating duck/goose that tastes like marinade is better than wasting meat.

I just got done eating a gumbo full of snows and it was delicious. Put the heart, gizzard, and liver in it.

The only fowl that’s very difficult to cook and make it good is
Spoonbills
I’ve had delicious pulldoo
Some folks in this thread don’t know how to cook.

I’ve had some bad waterfowl, but specks weren’t one of them.
I like to do them drunken style on the grill.

Chicken >> goose

Marinate with honey, soy, ginger, garlic overnight or at least three hours
We did a teriyaki marinade for the goose. And left in the fridge overt. While the goose was cooking on the grill, we heated the sauce.
Sliced thinly and then poured the sauce over the bird. It was delicious.
Thanks and hoping we get some more to cook.

Yea but they aren’t any fun to hunt. You came to the wrong place to try and make this argument.

You prefer hunting chickens?

Yall getting way too worked up over a goose. We aren’t talking about Kobe Beef or 100% Iberico Jamon here. Shoot the thing, try not to be wasteful, and cook it up however you would think it tastes best for you.

It appears to me that it was just people posting recipes for cooking speckle belly geese, as per the tgread instructed. The people that know little to nothing about cooking geese are the ones who got worked up.

Probably true. It’s just a weird thing to get worked up over. I’m just surprised people care so much about how someone cooks a goose lol

Smoke at 250 over pecan wood, and not very long for just the breast, maybe an hour and a half but I go by the thermometer

I prefer eating chickens. If I wanted to shoot an abundance of birds I'd pick something worth a shite to eat like doves. Hell blackbirds taste 10x better than a fricking goose.
