Lmao. This is clueless. A snow and blue will taste ok in gumbo. It still doesn't mean it's good. A speck is the only goose worth eating. But I mentioned earlier I didn't care for goose or most ducks. I don't like the taste of that shite. I rather eat birds that taste delicious. You know like chicken, doves, quail, etc. You can't make shite taste better than shite no matter what you do to it.

It's like saying tripe is delicious. It's not to me.

Don't forget about robins.
This is how I cook ducks, so specs should be better.
Ingredients:
Mushrooms
Green onions
Chicken stock
Beef stock
All-purpose flower.
Marsala wine (sweet)
Clarified butter
Rice or fettuccini noodle.
Fresh garlic.

Marinade the breast in whatever marinade you like. I go with Allegro game marinade.

Put butter in skillet and heat. Sauteed mushroom, green onions. Cut breasts into small pieces and roll in flower. Place in skillet and cook turning once. Add the stocks and wine. Condense the liquid to a watery gravy, pour over rice or noodle. You can add a little garlic if so choose. Merry Christmas.
