Ducote supposedly left his brother in charge and that was the biggest part of the downfall.
Govt Taco did the most with tacos and that's something you don't really need to do. Barracuda does fine because it doesn't try to make a taco with too many ingredients. They do it simple and well.

I like Barracuda better than Gov't taco in general, but I thought of them as 2 different types of taco spots... If I want a really good, consistent, more traditional street taco, Barracuda all day. But sometimes I'm feeling a Magna Carrot, Steak of the Union, or Socalism instead.

Tacos don't need to be overly complicated. That's where Gov't Taco failed. You can get more consistency at a Taco Bell.
Bottom line is that Gov't Taco is a failed Baton Rouge hype train that solely existed because it was publicized to no end and probably should've ended less than a year after it left White Star.

Will have to check out Barracuda then. I usually shy away from these specialty taco places because usually my favorite taco is just a ground meat, lettuce, tomato and cheese taco. I also love fish tacos. Can't stand the taco places that try to be too fancy with small tacos you can eat in two bites.

I thought Govt Taco was damn good at White Star. But the fell off a cliff at the brick and mortar.
I don’t really get the hype on Barracuda, I think it’s fine, but also pretty plain.
I actually liked Uno Dos Tacos better, I think they actually closed too though.

Baton Rouge chef Jay Ducote is returning to Food Network to compete on another television cooking competition.
Ducote, who has made appearances on the cooking channel several times over the years, is slated to appear in the season premiere of Superchef Grudge Match. The show, going into its second season, stages two different battles between chefs who have “beefs” with each other to finally bury the hatchet and win $10,000 cash, a prized knife from the losing chef and lifelong bragging rights over their food foe, according to Deadline.
For the episode, the renowned Chef Danny Wilson challenged Ducote in a head-to-head battle to prove who is the “real deal when it comes to Southern cuisine.”
The Baton Rouge chef is a familiar face on cooking shows. Ducote has previously competed in Food Network Star—where he made it to finals—in 2015, Cutthroat Kitchen, Chopped and Beat Bobby Flay. He’s also appeared on Fox’s MasterChef.
Ducote is planning a viewing party on December 26 at Brickyard South.

These networks seem to do nothing except recycle the same chefs on all of these shows.
Yet none of them seem to actually do anything except appear on these shows. They don't work in restaurants, etc.

Remember the days when you could turn on Food Network and learn hyper regional Italian food on Molto Mario or New Orleans food from Emeril or hell a 30 minute meal from Rachel Ray. Christ I’d take a Semi Homemade at this point rather than another competition show but this time the “chefs” have to cook with one hand tied around their back to find out who is the 1 Handed Ramen Taco Master.

Barricuda has the closest thing to a San Diego fish taco. That's why I go there. This town needs to up its fish taco game.
