Is Flank Steak underrated?

It’s my favorite cut by far, but I feel like it never gets talked about. Lean and beefy, but doesn’t dry out easily, and it’s a great value, usually $10 or less per lb.

You’re paying too much if you’re playing $15/lb. It’s $8-9/lb at Sam’s, $10-11 at almost every other store. Even my local beef guy is only $14.

The price has definitely gone up- used to be $5-6/lb, but filets used to be $12-15, and now they’re $20-25.
I like to marinade them like fajitas and grill. Cut the slab into 2-3 pieces, and hit with a hot grill. Tonight, I had some seasoned flank from Albertson’s (Texas pepper, or something like that) that I did in a cast iron skillet to 125. I did a gochujang, soy and honey marinade on some not long ago that was really good with saute’d kimchi and noodles- it may have been a tenderloin, but it was delicious as well.

Great flavor cut, love it in beef and broccoli, fajitas (as mentioned), and most importantly... a thai spicy beef salad.

Get a flank or skirt weekly. Whole Food usually has one of them on sale every week.

I’ve been doing top sirloin cap (Picanha) lately. $5.99/lb at Costco. Tastes great.

15 years.
15 years ago the Food Network took off like a rocket ship and they showed people what to do with these "lesser" pieces of meat and they instantly shot up in cost. Alton Brown did this.

All three used to be cheap, especially when Winn Dixie puts those yellow tags on them. It’s a little more expensive now but if we get to our local Winn Dixie early on a Saturday or Sunday morning it’s still possible to buy cheap beef.
