3 Gal Jambalaya

I'm doing a 3 gallon jambalaya in my 5gal pot for a small get together. How much stock/water should I add for 3lbs of rice and how long should I cover it for when I add the rice? This is my first time doing a "big" batch. Thanks!

I use 10 cups of water for 3 pounds rice. Cover and cook for 20-30 minutes depending on your recipe.

this is definitely not enough liquid.. cooking a 3lb batch this weekend and pulled my rig out last night to clean it and just cook a batch of rice (havent cooked in it in like 4 years). remembered reading this here so tried that since i haven't cooked a bigger batch in a long time.

rice wasn't crunchy but needed at least 2 more cups of liquid. i checked the calculator this morning and it said 14

Works every time for me and I cook routinely, never a crunchy rice grain. 1-gallon of water for 5-pounds of rice every single time for a jambalaya.

You may not believe me, but if I was cooking rice only like you did, I would have used 7 cups of water and it would have been fine. I do it all the time for when I cook stews and whatnot for large gatherings.

It works, but to each their own.

Can't help with the 3# rice because I measure with cups. As for the time, I always use the same....About 20-25 mins on very low then uncover and "fold" the rice over and recover. Typically I let it go another 20 mins on the same very low temp. Then, uncover, stir and serve the top part to the visitors. The bottom part, I scrape up for myself and whoever else knows about it.

I would use 10 cups too for 3 lbs of rice, which is just a little over the 1 gallon for 5 lbs rice rule that i go by, but it depends on how much water you loose to evaporation before adding rice, I dont boil the "gravy " too long or I would need more water

it definitely wasn't crunchy, just seemed kinda dry. i probably evaporated a little off, but i'll probably do at least 11 cups

Whatever works for you. There’s more than one way to cook it. Try it with 14 cups and see where you like it.

I just did 10.1 cups of liquid for 2.04 lbs of rice for 85% of a 7.5 quart pot. Hope this helps.

Went with 11 cups for 3lbs. 14 would have been too much. Came out great

IDK, rice doesn't look fluffy to me. I use Rat's calculator from a 3 gallon to a 10 gallon and it works perfectly every time!

My last 3 gallon

1 pound of rice is 2 cups. So 12 cups of liquid would have been fine. Prob a cup on either side would have worked TBH. I always do the 2:1 and add it to boiling liquid and let it rolling boil 5-6 minutes (these two have always been key IMO) before lowering heat and covering. I always use long grain as that’s what I prefer.

1 pound of rice is 2.3333 cups rice.
