Doing a cook off and must have enough for 150-200 servings.

Is a 10 gallon batch enough?

You have to cook in batches. Freeze and/or refrigerate as needed if you can’t time it to move to warm storage.

10 gallons may be enough depending on what other foods are there and how big of a serving you're dishing out.

If it's the main dish, you'll need a 15 gallon pot.

Id would imagine 4-6 ounces per taster, and I have always found that unless you attract everyone at one of those things you arent going to get the 200, more like 100.

I do a school cook off and teams are expected to cook 5 lbs of rice for pastalaya or jambalaya. Serve the dishes in 6oz sampler cups

Is it a meal ? 8z or just a taste 2z. Whatever number they say it will be less. Not everyone will try everything. Remember pasta weighs 2x as much after its cooked.
