It's a fundraiser for a cancer foundation. The cook-off is adjacent to a large craft show, Southtown Craft Show in Houma.
Still seems like a large amount of servings for a cook off.
I've always just filled my 5 gallon pot and been fine

A 15 gallon pot will give you about 150 servings.

Do the math. If you have a 10 gallon pot, figure you’ll end up with 8 gallons of pastalaya.
16 cups in a gallon
128 cups in 8 gallons
128 ounces in a gallon
1024 ounces in 8 gallons
8 ounces is a cup. A smaller serving is 8 ounces. If you’re going to put a scoop in a bowl, it’s probably going to be about 8 ounces. If you’re putting a large portion on a plate, it’s going to be more.
So a 10 gallon pot will give you about 128 regular one-scoop bowls.
If you’re serving less than a cup, then you’ll have more.

Never noticed it corrected it to Southtown, my apologies.
It's still large but the cook off isn't part of the event, they are hoping to get some traffic from it though.

You have to cook in batches. Freeze and/or refrigerate as needed if you can’t time it to move to warm storage.

10 gallons may be enough depending on what other foods are there and how big of a serving you're dishing out.
If it's the main dish, you'll need a 15 gallon pot.

It's a cook off so it will just be tastings so not full portions
