What cuisine is underrated?
Spanish food is really good. I rarely see it celebrated among the typical European choices (French, Italian).
Lebanese food is also delicious. But is it underrated?

Like you mentioned in the OP, it's hard to gauge what's actually underrated. As a balance of quality and lack of exposure, I'll go with Ethiopian.

Indian would definitely be my answer for underrated. I spent the first 39 years of my life never trying Indian food. I’ve had it twice in past year or so, and both were really good (both out of state). I’ve yet to try any local places though.
