They use the power run up the middle (primarily and will mix in zone read and counters) to set up the pass by getting one on one coverage on the outside and taking the shots deep.

And it really seems simple...pretty sure the coaches read the d and tell them what to run

It is very simple which some people seem to think is a fault. Lots of posters say "they run 4 plays" like that's something that's terrible yet it's still effective despite running just a few plays out of different formations.

The Veer and Shoot is predicated on the run, hence the "Veer"

Dude, they ran for over 350 yards per game last season. Only Georgia Sou ran for more yards...what are you talking about?

at it's core Briles puts never ending pressure on Line-backers and the safeties
over play the power run option - boom WR / TE wide open
I have a good feeling Briles at OC for about 2 years works his way back into a HC job

That's exactly right, Briles actually started with using a Flexbone Run N Shoot offense, sort of like what Houston ran with Andre Ware. What he's done now is modified those concepts into a Spread

They run a lot of 4 and 5 wide that would get all the speedsters we have, in space.
Guys like Scott and Brennan and Harris were made for an offense like that.

Don't forget. They ran for nearly 400 yards against North Carolina literally without a QB and won the game. One of the more underrated coaching performances

It's a great offense that is predicated on smash mouth up-the-gut running. Hence the "veer" part of "veer and shoot." Baylor has run the ball quite well - and part of the reason is that the defense has to account for both dimensions of the field with the threat of the passing game - vertical and horizontal (look where BU's outside receivers line up and run deep slants from). The lack of success of Baylor's QBs/WRs are due to (1) the QB isn't asked to make a lot of pre-snap or in-play reads...NFL doesn't like that; and (2) the WRs don't learn/really run all the routes on the typical NFL route tree.
It would be a great offense for a team like LSU that wants to really control the game on the ground but has the outside athletes to threaten all areas of the field. And it's simplified for the QB (not exactly LSU's strongest position lately). I don't much like the tempo aspect of it but that can be used/not used by preference.
For a modern CFB offense, the BU offense and Ohio State's/UH's offense, i.e., smash mouth spread, are the ways to go. Bama has incorporated a lot of concepts of the latter.
ETA - But since I hate Briles and think LSU is better than that, go find someone else to run it.
Gilbert would probably be the next option but accept that he's a very green play caller.
