Eggplant question?

If I peel it and slice it, how long til I need to cook it? I assume it will turn brown like a potato will? If so is there any way to stop that from happening? They will be fried. TIA

I'd put it in some salt water and stick it in the fridge. Rinse well before cooking it.

Yes, the salt water will take out the bitterness...then bread and fry till tender and golden.

Bowl of water, with a bit of lemon juice to stop brownage/oxidation of veggies.

wouldnt worry a ton about the color then, so just cover them well.

water, salt & lemon juice; that's what we've always used.
