Zermatt/Venice/Rome Honeymoon

Early June, full week and we plan to do train rides to each city (still need help figuring out tickets)
Spent the last hour or so searching previous posts and found some great recommendations, was wanting to get further ideas or directions as this is my first time booking a trip in Europe. My full list I've compiled is below.
Not trying to be an OT baller over there but understand it is going to cost a good bit, but if anyone has tips/recommendations on places to eat/stay/do would be helpful
For Zermatt so far I have:
Lodging-

Zermatt
I have an answer for each of your three categories. We did

We stayed at the Simi Hotel. There was nothing luxurious about it, but it was like a nice and rustic ski lodge type of hotel right in the middle of town. . We had a great view of the snow covered Alps from out of the back of our room which was all glass.
We had an excellent dinner one night at Le Gitan Grill Room. Highly recommended for good food in a nice atmosphere.
When people ask me to name the most beautiful scenery I have ever seen, I do not hesitate. It is the views from the Klien Matterhorn. We took the cable car to the top which is the highest point in Europe accessible by lifts. At the top there are scenic viewing platforms along with a cave carved into a glacier that you can walk through.
The next level down is the Trockener Steg Station.
There there is a cafeteria with a large terrace. That is where the best scenery is. On one side is the Matterhorn. the next mountain over. On the other side you are looking down on the snow covered Alps with the Town of Zermatt off in the distance. This scenery is absolutely incredible.
That is my Zermatt itinerary for you.

Now for Venice. I was just there in April.
We stayed at the last hotel on your list, Hotel Ai Cavalieri. It is our favorite
, We have stayed there twice. It is a renovated old palace on a small back canal close to the beaten path but not on it.
Of the restaurants on your list, we ate at #8, Al Covo. They specialize in fresh local seafood. It is owned by a nice couple. The husband is a native Venetian, and the wife is from Texas. She recognized my New Orleans accent (I didn't know I had one) and I told her that I recognized her as our friend from Texas as we had met her when we ate there about 15 years ago. Nice people and delicious food.
Bistrot de Venise is another very good one.
The closest restaurant to Ai Cavalieri is Ai Barbacani. The regular restaurant is good, but they have one table for two in a small alcove by an open door right next to a footbridge and small canal. Very romantic setting. You can only sit at the table for an hour and 55 minutes, but you can have pre dinner drinks, appetizers and dessert in the dining room if you want to stay longer.
Venice can be crowded with tourists in the early to mid afternoon, but it is magical at night.

We stayed at Coeur Des Alpes in Zermatt. Great views of the Matterhorn. Dinner one night at Alpine Gourmet Prato Borni which is inside the Grand Hotel Zermatterhof. Great meal. For Venice we stayed at Palace Bonvecchiati great hotel and location. In Rome we stayed at Hotel Splendide Royal which also had a great restaurant insides. All three were excellent locations.

Thanks I’ll look into those places tonight Woodsmaster, slowly starting to price everything out.

In Rome -
Favorite hotel is the Nazionale.
Restaurants -
Hosteria Costanza
This is an atmospheric restaurant in historic surroundings. It is built among the ruins of the Theatre de Pompey which is where the Roman Senate was meeting when Julius Caesar was assassinated there. Some tables are in pare of the original cave. And the food is good. Just off Campo di Fiore.
For a casual hangout, we like Enoteca Cul de Sac, a small casual wine bar with good food and an encyclopedic wine list. Just off Piazza Navona.

Antonio Vivaldi was born in Venice, and there are a couple of really good performances of his music that happen regularly. There's one that happens in his own church, church and there's another where the performers dress in period costumes—the one with period costumes is the one that happened the night we were there, and it was amazing, but they both get excellent reviews.
I'd also check the schedule of La Fenice and see if there's an opera during your stay.

In Venice also take a look at Hotel Bucintoro. Away from the crowds in Castillo, quiet, amazing breakfasts. Get a room on the lagoon side. Beautiful views.

Can't help you for Zermatt.
Venice: 2 days is enough. You have to see it, but then, you also don't have to go back.
Rome: 3 days is enough. But we like Florence way better and spent more time there and in the countryside.
Venice:
We stayed at St Regis Venice, but it was called Westin Regina and Europa at the time, but apparently it was remodeled in 2019.
We also highly considered the Baglioni and Gritti Palace.
You don't have to stay near Piazza San Marco, you'll visit there enough, but it was cool to eat dinner there. It's been a minute, but I believe it was Ristorante Quadri.
Other one might have been Beccafico Guna Restaurant, but it's hard to know for sure. Basically, you won't have a bad meal or experience.
Things to do:
1. Doge's Palace/ Basilica di San Marco
2. Murano glass tours
3. Gondola ride
4. Walk around (Rialto Bridge)
Rome:
You're going to want to stay in the city center to walk to all of your sights.
Things to do:
1. Vatican tour, sistine chapel, St Peter's (Takes basically the whole day).
2. Colosseum and Roman forum guided tour
3. Walk around (Spanish steps, trevi, Pantheon, Piazza Navona
4. Opera and Michelin restaurant
Places between Venice and Rome are worth a stop:
Florence is the best (3 days or more... we liked this way more than rome and venice, but you might "have to do rome and venice once".
Sienna is great.
Montalcino / montepulchiano
Orvieto
Venice: 2 days is enough. You have to see it, but then, you also don't have to go back.

I will throw in a +1 for the Gritti Palace in Venice - magnificent hotel.
For a honeymoon in Rome, I would also consider Hotel Hassler at the top of the Spanish Steps - incredible views and very romantic. The restaurant there Imago is epic.
