Travel suggestions - Belize in November

Formerly Travel suggestions in Central America, but a location has been chosen...Belize.
A friend wants to celebrate her 40th birthday by taking a week vacation, probably in Central America.
I think right now, the places I have heard are Belize, Costa Rica and Honduras. But really anywhere in that area is game. Some of us will be traveling from USVI and some from stateside, so someplace not too far from either.
Accommodations don't need to be great, no all inclusive resorts. Probably looking for something a little bit off the beaten path, a hidden gem if you will. Not much on crowds.
Interests are diving, good food, mountains, outdoor activities. Nobody is really into shopping or museums or big cities.
Doesn't have to be one place, it would be fun to stay in 2 or 3 different locations .
Any suggestions?

Montezuma, Costa Rica. Malpais, Cabo Blanco, Cascada de Montezuma...that whole peninsula is awesome.

Belize for the snorkeling and then to Guatemala for a Tikal tour.

Managua, Nicaragua typically ... you can take a small plane over or make it to the east coast take a small ferry over

For diving... ROATAN PERIOD is #1.
If you can, hook up w Anthony's Key.
Island of UTILA next to Roatan is good too...

We used to fly into San Pedro Sula and then onto the islands ... do not stay in SPSula.
BELIZE is a close 2nd.
Have a friend that lives there and says Sept is not a good month for Belize.

Don’t go to Belize, unless she is super into diving or fishing. Even then, i’d go else where. I’ve heard great things about Costa Rica.

A little off the beaten path may get you killed in Honduras. I'd focus on Costa Rica.

Lake Atitlan, Guatemala is really beautiful and can split time between there and Antigua.
Belize is great if you want to stay on one of the islands and do water activities most of the time. Great diving and very affordable day trips.

Belize ended up being the place she wanted to go the most so we are staying on Caulker Caye. Beautiful house on the water with a large dock and sunning area.
We dive every week, it's our biggest hobby. So she wanted to go somewhere with good diving. We will do some boats and try and get some shore diving in as well, though I've heard mixed reviews about that.
I think we are going to do a couple excursions, like cave tubing and zip lining...not quite sure what all there is out there.
And suggestions are appreciated.

I just got back from Belize. Stayed at El Pescador Lodge in Ambergris Caye. We fished two days and did the cave tubing and ziplining one day.

If you do an excursion on the mainland, I highly suggest the ATM cave -- there's nothing like it anywhere in the world.

Go across the country to see Xunatunich. Great Mayan ruins. You can get a driver for the day for cheap and it's 2 hours or less to drive all the way across the country.
If you run into a driver who calls himself Brown Sugar he is the man you want driving you.
