The Dane County farmers market was insane when we went to the Bama/Wisconsin game. 1000x better than what we have in Dallas.

You all obviously hit grocery stores...
But, I love to go to city parks (ex. English Garden in Munich) and people watch and chat usually with older folks.
I do concerts a lot...such as going to a country concert (Brad Paisley (go ahead and hate) in Dublin as the crowds are a different vibe than the US.
And this one is a little harder but most big cities in Europe have pubs that do not allow phones. It really makes people talk. In March, was in a pub in Cork and the wife and i were just enjoying ourselves when the guys at the bar said come help us with the crossword. Had some good laughs and conversations with them.

I like farmers' markets and street fairs. My husband always hits the spice aisle at a grocery store (he's the cook in the family) and a sporting goods store/department (says he likes to see what they use to hunt and fish there).

Running is fun and sometimes you can catch and run with local runners. I always go with the slow group, they are more fun than the serious runners and will point out things (like where they eat).

I don't know if it's "non-touristy" but one thing we always did traveling with school aged kids was go look at a college campus located nearby wherever we went. Usually try to have lunch somewhere adjacent and just get a general feel for the scene.

That's a cool idea for sure. My boys aren't teens yet, but we have pulled through some campuses to show them "you could go to school here!"
Trying best on our travels to plant a seed that life outside of Louisiana is encouraged.

Another one is something like going to the movies. Did that in Greece and it was interesting how small the theater was and they had an intermission. Unfortunately the movie was the disappointing "Public Enemies." But the experience was different enough to make it worth it.
Went to a Bollywood blockbuster in Jaipur, India and that was one of the coolest things I've ever done on a trip. The crowd was visibly moving below they were so into the movie.
These might fall more under "cultural" activities more so than "non-touristy" but rather normal things done somewhere else can be more fun than anticipated.

This is something we started when we were dating. Any time we go on a trip to a new place, we pick up a Christmas ornament specific to that city and/or whatever we did.
As others said, we will hit up the farmers markets, pottery shops, etc. But my wife also loves to find the local discount retailer (TJMaxx, Marshalls, Kohl's...) to check out the variety.
I've been doing this now for over 40 years. My tree is full and it tells the story of my life! It's not matchy and perfect like all those you see, but it's still gorgeous. It's had to get a lot bigger over the years for all those ornaments!

That's a good one and used to be my thing before the knees said no more.
Now it's birding. I'm either on a birding tour or birding on my own; good birding spots are usually very cool in their own right (aside from sewage ponds, heh). Very little time at the typical tourist attractions. They are overrun by narcissists taking selfies, and I can't wait to get away from them. If not birding then long walks that give me a real feel for a place.
