New York New York has a nice roller coaster. Circus circus has a water park. Maybe take a 60 min detour each way coming to or from the Grand Canyon and go to Sedona. Do not stop at needles.

Red Rock Canyon (~30 min) to the west of Vegas or Valley of Fire (~60 min) to the northeast.
Hit up Coffee Cup Cafe in Boulder City on way to Hoover Dam.

It's more like 15 minutes, and the hiking is beautiful and not too strenuous. I'd definitely put it in the "must see" category.

Go northeast to Valley of Fire>Zion>Grand Staircase Escalante>Page>Grand Canyon>Hoover Dam>Vegas.
Fit in Flagstaff/Sedona if you can.

Right by the Hoover Dam is Ringbolt hot springs (also called Arizona hot spring). Research it. It’s really, really beautiful...but don’t get your family lost in the damn desert. FYI, there may be nude people in there, I’d climb the ladder first if I was you.

Avoid the strip right now. Cheap rooms have made it a shite show at least on the weekends.

I lived there years ago, but was more geared to the outdoors. Not sure if your family would be that intrigued. Also, it's possible some of these suggestions might be closed (either permanently or due to CV19) so maybe Google it up beforehand.
The Bonnie and Clyde car is in Primm, about 45 minutes south on 15. Not sure if that's a big enough draw. A little further gets you to the Mojave Preserve. Might be too far a drive for too little interest.
You could hike the Red Rock loop in the west LV valley.
Drive and hike the trails at Mt. Charleston. I usually suggest that with the idea that's neat to see snow when it's warm in the valley...might not be as appealing these days.
Someone suggested the coster at NYNY. There are a few rides at the top of the Stratosphere if you're into that. That end of LV Blvd. gets really sketchy really quickly. Not dangerous per se, just trashy. Clark County Detention Center isn't far from there and at least one methadone clinic. The Fremont St. Experience is near there and should be okay for the 9 year old. Not sure how all of that works with CV19 though.
The Forum Shops were a good time waster.
Lunch at Mon Ami Gabi across from the Bellagio fountains might be fun. Madame Tussaud's wax museum. The Liberace museum. The Mob museum.
Hopefully at least one of those will stick, or at least lead you to something else that will suit the family.
