Explain to me like I'm a 5 year old about EU sim cards

Im about to order two SIM cards for Europe off Amazon.
I place the card in my phone and download the app. When the phone asks me if I want to use the number associated with the card, I say NO, and the app uses my current number instead? So if someone texts or calls me while in Europe, my phone will ring (receive texts)?

I usually just buy a sim card once I'm in europe for about 5-10 euro for a 3 gig data/100 minute talk/1000 texts card. The data is what you will burn through most. 3 gigs will last me about a week if I'm careful to connect to wifi when I can. Most bars and restaurants will have free wifi but you have to ask for the password. There is usually a pin # in the package you input when you install the sim. You remove your US sim and install the euro sim so you will then have a euro ph# and your US wont ring or text through to you. Often there is a manned phone kiosk in whatever airport you land in and they will install their sim for you. Orange and Tmobile are 2 big euro providers but there are lots more that are legit. Google sim cards for whatever countries you will be in and see what brand people recommend. Also, make sure you have an unlocked phone or the euro sim won't work. The $10 international plan with ATT will cost you way more than $10 as they don't give you much of a discount on data. But if you absolutely have to have your US phone# working then that's the way to go.

What I have read is the EU card won't allow me to text or call a US number. Is that true or did I misread that (may only been for that particular company)?
The one I was reading about using my own number, you have to use WhatsApp or something

It would be expensive to call the US from a euro sim card....same as calling europe with your US card. I use skype when I'm over there to call the US. You need to be on wifi but the quality is great. I use it to call clients. You do need to but $10 worth of talk credit but the cost is about 1 cent/ minute. I still have $7 of credit from 10 years ago and I've been to europe 5 times in that period. I also use PF Voicemail as my voice mail app even at home in the US. Its wifi based so it will alert me when I have a voice mail left at my US # and I can listen to the message when i am on wifi.
facebook messenger also lets you make callas to your FB friends so thats an option for calling friends back in the us. They need to have FB messenger installed too.

Since I posted last, I downloaded WhatsApp and now understand. It will text/call/video call any of my contacts over data, that have the app.
It's just me and my daughter going, wife and other daughter not going, so I just need to load the app on their phones

Skype is more usefull IMHO as it is free to whomever has the app but lets you call ANY number for around a cent a min.

I did the SIM card thing. Huge hassle and not worth it, IMO. I suggest just paying your carrier for the convenience.

The international data fees are still exorbitant.
Just activate the sim online and plug it into your phone. You’ll be using the number attached to the sim.

If you've got WhatsApp, you can remain connected using the free WiFi at your hotel or various other places (restaurants, bars, some malls & attractions). How often do you plan to use the phone? I managed 12 days in southern Italy & Sicily, and I only turned on data twice. The rest of the time, I got by with free wi-fi.
So don't over-estimate how much you'll use the phone.
I didn't bother with a chip, or a MyFi.
It is helpful to understand how to download Google Maps for offline use, and to do a little planning about exactly which maps you'll need.

You simply replace your sim card with a different preloaded sim card. What's so hard about that?
I went to Spain for 3 weeks and used a Spanish sim card. About $25 got me through the whole 3 weeks. That would've cost me $210 ($10/day) with the Verizon plan.
I'd say it was worth it.

I’m in The Netherlands now and have been just using FaceTime with the WiFi in the house we’re renting. Has worked great.

Eh, I had to change some settings in my phone, and it took me awhile to figure that out. Plus, the carrier I used in London (Three) sucked and apparently was having their own issues, so it took me nearly 24 hours to be able to use data. The guy in the store wasn't much help because he seemed convinced Verizon had my phone locked (it wasn't). So, while it seems easy, and should be easy, it isn't always "easy." However, I would do it again.

The main reason I need to do this is for safety. It will just be me and my 14 yo daughter. Just in case we get separated, she will know how to contact me.

If you happen to have a compatible phone Google fi is a pretty sweet deal. It's what I will be using when I head to Germany in a month. It's $20/mo plus data I think prorated $10/gig but I forget. Same prices in US as abroad. Can do wifi calling. Calling US numbers is free but international is a Cent or so a minute.
One thing you potentially can do regardless is to set up call forwarding to your euro number. You'd need to set it up before you swap out the Sims though
