Any Recommendations for Non-Traditional (Non-Tourist) Caribbean Destinations?

Long time lurker, first time caller.
Wife and I are looking for an atypical Caribbean destination this Spring (Late May actually) but are overwhelmed with the amount of islands and the unknowns about crime, etc.
We are both 28, no kids; we lived in Europe for 4 years before moving back to the U.S. in December, so we are comfortable traveling but we don't take to the touristy stuff much. We would prefer a remote location that's safe where we can enjoy the natural Caribbean on a self-guided wine (or rum) tour over the course of a week.
After we decided Jamaica was too rough right now, we were settling on the Virgin Islands; however, that's a pretty typical destination and I'm sure it will be crowded that time of year.
I'm obliged to anyone who can share their experiences with a lesser-known destination.

Just making you aware that late May is the start off the offseason in the Caribbean. Hurricane season starts June 1st. Travel and the amount of tourists scales back a bit, and there’s more of a threat of storms. I lived on St Croix (USVI) for a year and I can remember things being dead starting in late May, lots of restaurants cut back hours and nights they opened.

Not sure you’ll find a lot of wine tours in the Caribbean, but maybe look into St. Barths or the BVIs. As someone mentioned it is going into low season in May which is good news for your finances.

Anegada, BVI.
Only 300 people live there. No cruise ships. Fantastic very long beaches. It is never crowded.
You aren't going to find any wine tours in the Caribbean.

As much as it's going to recover. Once you get away from the beaches St. Maarten is a shithole. People do not take pride in their properties.
If you want to fly into St. Maareten then immediately head to Anguilla or St. Barth.

Martinique is off the radar for anglophones.
Entirely french, and the Rhum is amazing. Has a chill beach-bum atmosphere. Food is delicious.

I would second one ive heard a couple times. Anegada. Cow Wreck beach is beautiful. Having fresh chargrilled Lobster on the beach that were caught that day...awesome. Seeing the pink flamingos. Pretty cool.
Another is Virgin Gorda. There is a nice resort with a somewhat private beach in a cove. Little Dix Bay. Then you could take a trip to the Bathes as well.

Little Dix Bay is $$$$$. It's starting at $900 a night. Bitter End Yacht Club has not reopened yet. Virgin Gorda is not fully open for business.
On Anegada there are several options. One of which is Anegada Beach Club where you can get a beachfront palapa retreat for less than half the cost at Little Dix Bay.
And you're right. Nothing like an Anegada lobster for dinner or breakfast at Pam's.

The wife and I are heading to Grenada this spring. You should look into it. It's not as accessible as other islands, which helps keep it 'less' touristy than others.
I can't give a recommendation since I've never been there, but it's something worth looking into.

He should also check out St. Vincent and the Grenadines. Charter a boat with a captain and sail among the islands for a week or so. Can do the same in the BVI.
