Updated to lollipop. It's a little slow but it shall do. I have a nexus 7 2012.
I love android tablets. I have an iPhone 5s, which is get for cellular mobile use, but once office comes to lollipop (I had the preview on kitkat 4.4.4) I thjnk android tablets will reign supreme

What level of modifications are we talking about? It sounds like I may not even care about rooting, or that I should at least take time to learn Android before I start fricking with it. The reason I've stuck with iPhone for so long is that my mobile requirements have always been simple, but I'm just in the mood to try something new.

I would recommend rooting eventually, though. I think you can root without unlocking the bootloader, but most tools and step-by-step guides will probably unlock it anyway. Personally, I love having a custom recovery because you can do a full imaged backup of the phone straight to the device's storage, which you can then copy to another location. There are lots of "power user" apps on the play store that require root, as well, and it's nice being able to install them and use all their features.

This would be handy. iTunes backup is frustrating if you make the mistake of using two phones with one computer. I'd like to store a full image of my phone as a backup. This requires rooting?

But as far as I know, only a custom recovery is required in order to do an image (Nandroid) backup (unless the device manufacturer provides software to do it on a PC). An unlocked bootloader may be required in order to install a custom recovery, but I'm not sure. I don't think rooting is required at all.
Can someone else clarify?

I don't generally jump into things like that without knowing why I'd want to in the first place, as well as full knowledge on how to fix it if something were to go wrong. The problem is I'm 99% in the dark when it comes to everything Android. I've never used a phone with Android for more than a few minutes, and that was years ago. I guess I just need to look for a list of all the things you can do with a rooted nexus vs. non-rooted.
In the past, I jailbroke iphones for the following features:
1. App piracy, which I know can be done on Android without rooting.
2. Ad-free, unlimited-skip Pandora, which I am pretty sure doesn't require rooting.
3. Blocking numbers (before iOS 7), unsure of the Android option for this but I trust that it exists and works fine.
4. Unauthorized hidden tethering with PDAnet, which can be done on unrooted android by sideloading pdanet.
5. Free in-app purchases for apps that don't require server validation of purchases.(this might require rooting)
But I'm sure there's so much more that can be done, but my knowledge here is limited by apathy towards mobile devices and the constraints of the iPhone in general.

A few things I think you might be interested in doing with root:
Better, more detailed battery statistics
CPU tuning
Adblock
Greenify (basically lets you imprison other apps that may hog battery in the background)
Per-app network stats and logging
Titanium backup (per-app backups, including settings)
Tasker (deserves its own thread, works fine without root but some tasks do require root)

Knowing the little bit I have gathered about you from reading your posts on the interwebs, I get the feeling that once you get Android in your hands, learn it, and tinker with it, you're going to love it. Then it won't be long before you are rooting and modifying your OS or kernel.

There is safestrap recovery for several phones with a locked bootloader. You can still flash custom ROMs but, aside for a few, the ROMs must be from the same system. Also, with safestrap you can do Nandroid backups. And rooting is definitely required on samsung devices (I have only messed with my S4... for now)

I'd bet it ships out tomorrow. They haven't shipped a single one yet so no way are some not shipping when expected. They have an initial inventory of them.
