In my experience, yes. My in-laws had electric up until Ida flooded out their house. Cooking on that thing was a giant pain in the arse. Your heat method was either barely hot, or burning the shite out of everything. There was no gradual heating up, it was all or nothing.
In college, i also had an electric range. My cast iron pot was too heavy for the range and it simply didn't work.

You had a strange experience. It's heat transfer; it's not magic. Gas is initially faster because it can deliver more BTUs, but once a pan is at temperature heat is heat. Both gas and electric can deliver a little or a lot and the results will be identical. If you had a burner with crappy regulation that's crappy equipment, not the heat source.
Electric can't do certain things as quickly, like boil a large pot of water or bring a pan up to sear temps. Speed is essential in a restaurant.

The problem with induction is that many pans will not work on them. They have to be magnetic in order to make it turn on.

At least my house won't blow up if a hurricane or tornado hits. My Miele induction cooktop hasn't let me down in the five years I've had it.
Like I said, you gas stove freaks are something else. I've never seen a cooking preference annoy a group of people so much. And it's not like you're in good company. These chefs with gas ranges you all seem to be fawning over are all huge liberals. I bet you loved seeing Jill Biden at her gas stove.
If you want a reliable cooking appliance for any condition, I suggest you get a wood stove.

and a good commercial gas is less then $3000
all parts are replaceble, it comes with a repair manual,
a parts breakdown, and a cust serv line to order parts
electric anything cooking is disposable, un-repairable,
and what happens when you accidently drop a 15" cast iron frying pan on your glass top induction, vs my cast iron stove
my commercial stove kept the family warm during the great texas freeze-out, too
and a good commercial gas is less then $3000

Gas is waaaay cheaper than electricity, so it shocks me to hear “chefs” use them at restaurants to cook! Or maybe that’s part of the reason why eating out has become so expensive lol

I run my commercial (imperial 24") on small propane bottles,
a simple 3 tank manifold, 3 valves, 3 regulators, out of gas, throw the valve, usually don't even have to re-light the pilot lights, (remember those?)
change the bottle later

I do, and have replaced 2 gas stoves less than 10 years old because the electronic board goes out, un-available
that's when I bought my commercial
in the 80's and 90's I repaired microwaves, now everything is in one not available board
I fixed washers dryers in the same time, easy fixes
replaced the last washer same reason
I completely stand by my statement, and would assume you don't even own a screwdriver, and would need a operation manual to use it

You all are lying through your teeth, just like liberals. Electric stoves are very much used in commerical settings (see link), unless you all are now classifying cruise ships as residential. I wouldn't put that past some you and your twisted logic. Do you not understand that a cheap gas stove will have a lower BTU output than an expensive one? The same applies to electric. You cannot compare some old coil top stove to a high powered radiant or induction cooktop. As always, you get what you pay for. Not to mention, gas ovens just aren't as good for some applications. Water vapor is a byproduct of combustion and that will interfere with roasting and crisping food.
No one here has advocated banning gas stoves. You like gas, great. But no need to make stuff up to try and bolster your very odd agenda.

a good commercial gas stove WILL improve your cooking, especially in the oven, because the heat is much more controlled and even.
my saute' burner, will go so low, a 10" cast iron skillet will barely melt soft buttter, and a simple visual tells you the exact heat
