The problem with your assertion is that the “simplest solution” is infact a terrorist act - based on the fact that vandalism against Catholic properties in France have been far more common than building fires.
In this case, a straight forward accidental fire is actually the outlier event.

The European press do all they can to force the multiculturalism narrative. There was a concerted effort in the UK to either hide or downplay the Muslim grooming scandals. Did any of us have any idea before today about the epidemic of church vandalism and arson in France? Do you think if 1 or 2 mosques were vandalized or burned down it wouldn't be a headline? It isn't that people don't believe this could be an accident or some electrical issue, it's that neither the press nor the government can be trusted to give an honest accounting.

I mean, it's not unknown for fires to happen during the restoration process of older buildings. It's rare, but not unknown. The UK has had three fires of older buildings, one at Bristol, one at Exeter and one in Glasgow, the past several years.
