My theory has a few parts.
1) International diplomacy. The Monroe Doctrine was still fresh and we didn’t want to seem hypocritical in taking too much territory from newly independent nations that we, ourselves, had told Europe to stay away from.
2) Manifest Destiny, by definition, was about westward expansion. There was a ton of opposition in Congress and the North to the Mexican-American War, but Polk intended to keep the promise that had gotten him elected. After Guadalupe Hidalgo, his promise was kept (outside of 54° 40’).

Meh.... he's skipping over the fact that the US attained that land by whooping some Mexican arse in a war!
To the victor go the spoils. A principle as old as humanity. If Mexico wants it back, it's going to take more than a map on a piece of of paper to reclaim it.
